Ginger Porter; Spiced Ale
As the winter rolls on it's hard not to think about the coming spring and all the lovely golden beers that it brings. However, early January is a good time to get in your last heavy brew, leaving it enough time to ferment, age and be drank before the rains of spring bring flowers and warmth back into the world.

Ingredients
8 lbs US 2-row
2 lbs munich light
1 lbs brown malt
8 oz chocolate malt
8 oz Crystal 120 L
1 oz Northern Brewer hops (60 minutes)
1 oz Willamette hops (5 minutes)
1 tsp Irish Moss (15 minutes - how to use properly)
3 oz ginger root, peeled & sliced (15 minutes)
3 oz ginger root, peeled & sliced (5 minutes)
Danstar Nottingham Yeast

Procedure
Mashed 17 qt at 152 F for 60 minutes
Sparged with 5.25 gal at 180 F (brings my mash up to 168 - 170 F very nicely)
Brought to boil, followed hop schedule, chilled, siphoned off to bucket and pitched yeast.
OG: 1.058
